An experienced private chef is required for a large private residence in Monaco with four permanent residents.  We are looking for a private chef to manage all food operations.  Experience in high-level households is required.   Candidates should have an eye for detail, be able to create fine dishes and present them like paintings on a plate, love to experiment, create recipes and standards that will serve as guidelines for the kitchen staff to follow.   The chef will work in coordination with the butler to ensure the highest level of food service.  

Duties will include

·       Management of the kitchen operation for a household of four people

·       Food product management: locating best products and providers according to the needs of the employers, storage of dry, fresh and frozen food, ordering of food and kitchen supplies in coordination with the butler

·       Managing a staff of four; scheduling, work allocation, supervision, training

·       Verification of all operational and hygiene standards and their implementation

·       Creating menus for one adult and two children, and occasional private events

·       Food preparation three times per day, seven days per week, for 3 different people (one adult and two children) and simple staff food preparation for a staff of about 20.  The Chef will need to organise the time of the cooks, the supplies, preparations and materials in such a way that the employer does not feel the absence of the chef

·       Travel to a separate location in Courchevel for the winter season


Requirements

·        Minimum 2 years of operational experience as a chef in a high-paced household or on private or charter yachts

·        Thorough knowledge of European cuisine (French & South Europe) as well as world kitchen

·        Very good knowledge and adherence to HACCP norms

·        Strong managerial skills: time, people, materials and premises

·        Hands-on, lead-by-example mentality

·        Professional communication skills with staff and peers

·        Minimum language requirements: English and French, any other language is a plus


This is a full-time contract after a 6-month trial period.  5-day working week.  Live out.  Negotiable salary based on experience.   (HU3730)
